Here is a recipe for making egg biryani at home:
Ingredients:
- 3 cups of basmati rice
- 6 eggs
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 tablespoon biryani masala powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- A handful of mint leaves, chopped
- A handful of coriander leaves, chopped
- 1/4 cup yogurt
- 2 tablespoons ghee or oil
- Salt to taste
- Water as required
Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes and then drain.
2. Hard boil the eggs and peel them. Cut the eggs into halves and keep aside.
3. Heat ghee or oil in a large pan or pot. Add the sliced onions and sauté until golden brown. Remove half of the onions and keep them aside for garnishing.
4. Add the ginger-garlic paste to the pan and sauté until the raw smell disappears.
5. Add the chopped tomatoes, green chilies, biryani masala powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the spices are well combined.
6. Beat the yogurt in a bowl and add it to the pan. Stir well to combine everything.
7. Add the chopped mint and coriander leaves to the pan, along with garam masala powder. Mix everything together.
8. Now, add the soaked and drained rice to the pan. Gently mix the rice with the masala mixture.
9. Pour in enough water to cook the rice. The water level should be around 1.5 to 2 inches above the level of the rice. Bring the water to a boil, then reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
